Cooking with Sam Seideman: Basic, Delicious Hummus Recipe
Chef’s Tips:
Use this recipe as a basic hummus recipe.
Sam likes to add ingredients like sun-dried tomatoes, pesto, roasted garlic, etc. to this hummus to jazz it up a bit.
For a creamier hummus, save chickpea liquid. Then, add a little bit to the hummus after adding your olive oil.

Basic Delicious Hummus Recipe:
Ingredients:
⁃One (14oz) can of chickpeas
⁃1/3 Cup tahini
⁃Juice of one lemon
⁃2 large garlic cloves
⁃Cilantro
⁃1/3 Cup Olive oil
⁃Cumin
⁃Salt
Directions:
1. Add lemon juice and tahini to the food processor, mix on high for one minute
2. Drain and rinse chickpeas. Add to food processor and mix until smooth
3. Drizzle in olive oil and allow to mix.
4. Add cilantro, salt, and cumin. Mix until smooth
5. Put hummus in bowl, top with a drizzle of olive oil, paprika, and cilantro or parsley

Cooking with Sam Seideman: Easy Steak Sandwich Recipe
All-Time Greatest Steak Sandwich by Westporter Sam Seideman
Ingredients:
Flash Marinade
⁃3 inch piece of fresh ginger
⁃4 garlic cloves
⁃1/4 Cup hot chili paste (I prefer Sambal Oelek)
⁃1/4 Cup Fresh Lime Juice
⁃2 tbsp Brown Sugar
⁃1 Cup Coconut Milk
⁃2 tbsp oil
⁃1 1/2 lbs skirt steak
⁃Salt and pepper
Kale Chimichurri
⁃1 cups worth of chopped kale
⁃1/2 Cup flat-leaf parsley
⁃1/2 Cup cilantro
⁃1/2 finely diced red onion
⁃1/2 Cup Olive oil
⁃1 minced jalapeño (keep the seeds for spice)
⁃Two celery stalks finely chopped
⁃3 minced garlic cloves
⁃Juice of two limes
Garlic Aioli
⁃2 cloves grated garlic
⁃1/2 Cup mayo
⁃Juice of half a lemon
⁃Good handful of chopped parsley
⁃Salt and pepper
⁃Ciabatta
Directions:
Flash Marinade
1.Grate ginger and garlic into a bowl
2.Whisk in chili paste, brown sugar, coconut milk, oil, and lime juice
3.Add steak to marinade and allow to sit for 15-30 minutes
Kale Chimichurri
1.Add kale and lime juice to a bowl
2.Massage for 5-10 min. to soften the kale
3.Add the rest of the ingredients, toss together and set aside.
Garlic Aioli
1.Grate garlic into a bowl with mayo
2.Add lemon, parsley, salt, and pepper
3.Mix and set aside
Steak
1.In an oiled grill pan on high heat add steak into pan
2.Let cook for four minutes then flip
3.Cook for another three minutes, remove from pan and allow to rest
Assembly:
1.Toast halved ciabatta on the same pan as steak
2.Add a generous spoonful of garlic aioli on each half of the bread
3.Top one side of bread with sliced steak and a generous handful of kale chimichurri
4.Close sandwich and slice in half (triangles > rectangles)
5.Enjoy!
